Φουντούκι, με άλλα λόγια να αγαπιόμαστε.Λοιπόν σου στέλνω αυτή την συνταγή να με θυμάσαι:Προτιμώ τα Ελληνικά φουντούκια αλλά και τα Τούρκικα καλά είναι:Dark Chocolate & Roasted Hazelnut Cookiesmakes 16 cookies {depending on the size of cookies and batter consumed while baking}Ingredients: 250g all-purpose flour 1 tsp. baking powder 50g granulated sugar 200g brown sugar 3/4 tsp. Himalayan salt 2 eggs 150g 70% chocolate, roughly chopped 75g hazelnuts, roasted {see notes} 150g butter 1 tbsp. vanilla extractInstructions: Preheat the oven to 200°C and line a baking sheet with parchment paper. Begin by browning the butter in a small pot {see notes}. Add the vanilla and set aside. In a kitchen mixer on medium speed, mix together flour, baking powder, sugars and salt und combined. Add one egg at a time and continue beating. Next slowly add the browned butter. Beat until combined. Then throw in the chopped chocolate and roasted hazelnuts. Using a spatula stir until the chocolate and hazelnuts are well incorporated in the cookie batter, but do not over-stir! Measure out approximately 1-1.5 tbsp. of batter and roll a ball of dough. Lay out 4-6 dough balls on the baking sheet {I fit 6 cookies per baking sheet}. Bake the cookies 10-12 minutes, until the edges are slightly golden and the center is still soft and chewy {I baked mine for 12 minutes}. Let the cookies rest on a cooling rack.Notes: For a great tutorial on how to properly brown butter, I really like this “how-to” by Megan from Country Cleaver. Roasting the hazelnuts is very simple: place the hazelnuts on a baking sheet lined with parchment paper. Roast in the oven at 180°C for 20-30 minutes. I like mine more toasty {almost burned} but the level of toastiness is of course personal preference. When the hazelnuts are roasted to perfection transfer them to a slightly damp tea towel and rub off the skin. Ta-da! Now they are ready to be thrown into the cookie batter.
